Can the radiator from a 91 jeep Cherokee be
put into a 2003 grand Cherokee?

No, the earliest you can go is a 1999 model with the 4.0L. Plus I would never install a 29 year old used radiator in any vehicle, You will go through all that work to have it possible leak. Pick up an OE radiator and some coolant with hoses for around $100 and be done with it.
