would a 255x65x16 good for a 2001 jeep grand cherokee laredo 4x4

P225/75R16/XL is the OEM size. The 255X65 are real close to the correct height and diameter. The only problem could be the extra width causing rubbing of the suspension. You could use spacers if that is a problem. Check it using this site - http://www.miata.net/garage/tirecalc.html
