2000 Grand Cherokee in-line 6

Replaced heater core one year ago and had no heating issues. Now engine
only heats to roughly 120-130 degrees; not usual 160 degrees. What are probable problems? My first instinct is a stuck thermostat but don't know if
heat sensor would cause this problem.

If it is really running cold, then you are right to suspect the thermostat stuck open. If you replace it, get the recommended heat range which I think is 195 F and make sure it's not installed backwards. But if the hoses feel plenty hot, then the temperature gauge sensor may be giving you a false low reading. I like to use an infrared temperature sensor gun to check engine temps at the thermostat housing. Mine reads 195 F when fully warmed up.
