I have a 2000 gmc Sierra 1500 and just got done changing my oil. Is it normal for my oil gauge to be in between 60 and 80 when I push on the gas?

Yes just after fresh oil change,pressure will be high,as soon as it breaks, the oil down it will drop back,to a lower number.
