Overheating

The thermostat was removed from my
2000 Dodge Caravan and we have
never had any problem with it
overheating until now, but ONLY if the
ac is off. The ac blows cold when its
on.

The AC requires the engine cooling fan to operate at high speed so the extra speed of the fan is keeping the engine cool.. sounds like your engine temp sensor circuit (thermistor,Relay etc) is malfunctioning ... OR , if you car has 2 fans than one of them quit
