why do my truck still wanna run hot after i've changed waterpump, thermostate, flushed radiator (no leaks or bent coils), no funny looking oil after checking cap for watery oil?

If I let it warm up first for about 10 or 15 minutes it
runs fine, if I don't then the temperature gauge
starts to go up then before it completely runs hot it
goes back to normal, releasing a little fluid of
course, it's like it opens a door or something

It may have air trapped in the cooling system. Thermostat could be wrong or in backwards.
