i just want a good mechanic that deals with honda performance.

Yeah its kinda difficult to find a good tuner around here in Orlando. Most of the mechanics do repairs. There are some dyno shops around if you're interested though. They mostly specialise in muscle cars but they'll do some work for you. A quick search should bring up a few.
