I got stuck on a muddy field wheels just spinning couldn't get off so got
towed out only took minute but now when I put my foot on the brake pedal
it's spongey and airey and makes horrible noise when full on fine when driving
have I damaged something or is it mud or stones

The spongy feeling may be your ABS system. The wheel speed sensors may have mud contaminating the works.

yep sounds to me like you got mud stuck all up in the sensors and brakes take a powerwasher to it and give it a good cleaning. for best possible clean jack the car up and remove the wheel you are cleaning so you can be insured you got all the grit out.
