my oil pressure light started blinking while I got stuck in traffic, but went out when I restarted my car. There is plenty of oil in there. what gives?

I'm guessing the oil pressure dropped out of the sensors range due viscosity level and triggered the light to come on. When was your last oil change?

It may be that the oil pressure sending unit may be bad, or it is doing its job and letting you know oil pressure is low. May want to get the oil pressure checked with a mechanical gauge.
