Iron tight is used for head gasket leaks, which leads me to assume you have a high mileage motor. A motor that feels like it's "jumping" could indicate you have a problem with timing or a misfire. You may also have a broken motor mount exacerbating the problem. The first thing to do is have the motor scanned for any trouble codes. Any of the parts stores will perform a simple free scan, you can post the codes here further analysis.
