On a 2000 Buick LeSabre, where does the battery cable connect to the chassis?

Should connect to the engine block. There is usually a ground strap that goes from the engine block to the chassis near the motor mounts.

That's interesting, I didn't realize your battery was located under rear seat. My info says negative battery cable mounts to floor pan. If you want mount redundant chassis ground from chassis to engine block, it should work fine. I've always heard the most negative place was the generator. Maybe the generator mounting bracket has a bolt where you could attach it? I'm just talking about some place easy to get at. You wouldn't want to get in the way of any pulleys or belt.
