just replaced thermostat and upper hose and when i turned on the defroster to help circulate coolant, pressure release from near carburator blew out

If a hose blew out replace it and use good clamps.

it isn't a hose....leaning towards head gasket.....maybe....tried it again and nothing happened...maybe it needs to be under certain amount of pressure..i guess

There is a fitting on the back on the intake manifold on the passenger side that is known to be brittle as it gets old. I doubt you'd ever see a head gasket leak coolant like that. Even an intake gasket would be doubtful. Clean it off and find where it's coming from, it's a leak so it comes from somewhere.
