What can cause a '03 mitsubishi eclipse gs 4cyl to burn oil w/low miles?

Are you sure its burning the oil? Is it smoking blue smoke? Typically if its not smoking but oil level is going down its the valve cover gasket. There are o rings around the spark plugs that tend to leak. Oil will gather around the plugs and in some cases follow the plugs threads down into the head causing a light blue smoke at times.
