I have a 2000 Mercury Grand Marquis and the oil gauge has started to jump from 0 to the middle of the gauge. Any suggestions?

When ever oil pressure is an issue, you want to know what it is. Have it checked with a mechanical gauge to know for sure if it is an issue. If it is fine, just may be the oil sending unit.

change the oil pressure sensor , usually located by the oil filter. if this doesnt help then proceed to the next step
