2005 MPV 3.0 Motor turns over but won't start.

It has 120,000 miles on it. Bought it
thinking it needed a temp sensor but
turned out to be head gaskets so I put
timing chains in also. It ran before the
repairs. But it would die when the
temperature hand hit normal.

Maybe the temperature gauge or sensor is bad and the engine was actually overheating. The best thing you can do now is to put an OBD reader on it. You'll probably get a lot of codes, and if you're not able to decipher them, you should have a competent mechanic diagnose this. By your question, there are so many possibilities I wouldn't know where to begin.
