Looking to upgrade my 350 engine, I have
some polished aluminum heads to put on it,

This would depend on the rest of the engine and drive train. The flow rate of the heads, intake manifold and carburetor as well as the compression ratio and exhaust system will determine how much cam you can use. You also need to decide if you want a screamer that idles at 1,500 rpm or a streetable car.
