2004 Dodge Stratus overheating issue without reading hot

2004 Dodge Stratus 2.7 flex fuel
coolant boils/ bubbles but the car gauge does not read hot.  i replaced the thermostat and also the water inlet with the temp. sensor.  car still does the same thing.  i did the chemical test for exhaust fumes in the coolant but came up negative.  i also burped the system a few times and pushed all the air out.  the radiator has a super small leak but that it is.  i also replaced the cap.  last time the car was running the fans kicked on around 220 and the air was hot.  the fans cut off for a little bit but when they came back on the air was cold coming from the fans.  i am really leaning towards a blown head gasket.  what is your opinion on this before i start doing all the work?  thank you very much

i am thinking some sort of gas is leaking into the coolant causing the coolant to boil. this is why i am leaning towards a blown head gasket. also the oil was changed and it looked normal no coolant in the oil
