I have an opportunity to purchase a 2005 G55 AMG for about $30k more than the 2003 version. Other than the additional horsepower (approx. 150 add'l ponies), are there any other glaring differences I should take note of?

I would consider the 2003 model as suitable for most needs. To me personally, 150 extra HP wouldn't be worth an additional 30,000 dollars, but that is just me. Go with the vehicle you like better as they are both excellent cars.
