99 chevy s10 2.2 5 speed

I have a 99 s10 2.2 5 speed and when I start the truck the
temp runs 210 and stays there but when I shut the engine
off water is boiling in the radiator and reservoir and steam
rolls out. Any suggestions on what is causing it and how
to fix it?

new thermostat would be a good start, check heater core to see if it is plugged up/blocked, make sure fluid is right mixture anti- vs, water

Thank you!! I'm going to try a thermostat this week. Also my oil pressure sometimes bounces from 60 to 40 to 0? Any idea why?
