2000 grand am 3.4 changed my thermostat changed my temp. coolant sensor. why is my car still running at 200-220 and my temp gauge likes to jump up and dwn too only when it's heating up though whats up

changed thermostat changed coolant temp sensor. my car never ran above 180 before
last summer when the temp gauge spiked.... now it runs at 200-220 it has shut off on
me once before.. my fans kick on and off like the are suppose to i'm now at a loss
please anyone with any info help... when i replaced thermostat left cap off of res. it
bubbled up i put cap on temp made it to 200 then kicked back down now it's staying at
195-215 when it gets up to 215 i turn on my heater and it stays around 195.

too many lol almost 200,000 but the headgasket was just replaced last summer

what is the best way to bleed this kind of system it doesn't have a cap it just has the res. on it
