What is an acceptable GM 6.5l Diesel operating Temp?

I just purchased my first Diesel, a 2000 GMC Savana 3500. The temp creeps
up when I tow a load ( generally 3500-6500lbs on my 18ft car hauler).
Yesterday it was very hot here in Florida and the gauge would go up near
235 and I could hear the fan clutch engage, it would drop to about 210 and
disengage. I'm not used to temps getting that high, is there cause for
concern? how do I get it running cooler, or do I even need to?

I would do something about the 235 degree temps. A HD radiator is the first thing I would do. Check out Mishimoto.
