Can injectors make my diesel jump and jerk at highway speeds and not in town

Not really, sounds more like a transmission or torque converter not locking up. Have you checked the transmission fluid level? If it's low fill it up to the proper level while it's running. Then look for a leak. Any check engine lights on when it acts up?
