How do I handle letting someone test
drive my car and protect myself?

Check your insurance policy. It may not allow other drivers and restrict or limit your claim ability if you allow them to operate the vehicle. If your policy is like this then have the potential buyer show you proof that they have coverage and, as FOR stated, ride along with the buyer.
