My 78 Chevy fire right up with a small shot of
starting fluid in the morning and will fire up
and ru good for the rest of the day, once it
sits over night it won’t fire again without
starting fluid

Sounds like the choke is not working. before you start it in the AM pull the air cleaner assembly off and see if the choke flap snaps closes when open the throttle, if it doesn't then adjust the choke thermostat on the passenger side of the carb until it closes just enough to hold an 1/8 drill bit in the air horn. Now this is just a place to start, some will need a richer setting some will need less. Next make sure the choke pulloff is full operational or you could experience flooding if it's not working or if it's set too lean it might stumble on slight acceleration.
