Heat not working when above operating temp (195)

So my heat will work fine between about 170 and 195 but once it goes above
195, which just recently started happening, it will start to blow cool air. Then the
gauge will show about 230 but when I put my hand on or near the engine it is
barely warm.

Check coolant. If it's low your car will show good temp but is really overheating. Your coolant runs through your heater core and if your low it will blow cold air only. Because it needs to be submerged in coolant will give Inaccurate reading from air.
