Coolant temperature message

All of a sudden there is a message showing
on the dash of my 2015 vw beetle that says
coolant temperature. Why did it start to
display this?

Assuming it is a correct message, first start by checking the coolant level in the radiator as well as the coolant overflow bottle. Then check that your radiator cooling fans come on when they should. Fans run off a sensor, fuse, relay, and motor itself. Next consider the thermostat is not opening properly. I worked on a VW that had a water pump with the plastic impellors crumbled away, won't pump. Never expected that one.
