How old is the radiator? like most older cars you could have a build up or particles in the engine and radiator. I would do a power flush..https://www.youtube.com/watch?v=qsjAYjhisWc

Unfortunately I'm finding out all the kinks with the car one by one. Even worse, some of them as Im driving it! Thank you for the answer, much appreciated. Also the car seems like it might have a timing issue, doesn't seem to be 100% there, any ideas?

I have seen a defective distributor or distributor drive gear ware causing the timing to be off a bit. The timing chain can stretch and loosen over time...

Very well thank you that definately helps, know what to look for now! This was a sort of drag car, not gutted completely, but some things have been replaced/upgraded. ( engine cam, ect) Do you know much about stall/torque converters and the correct transmission linkage to the carb? Transmission was just redone, but they kept the same stall/ torque converter, rpms hitting like 2000-2500 before it moves .Book shows linkage connected to a holley, not an edelbrock 750cfm. Curious if that would have anything to do with that?

you do need a flush but you need a thermostat to slow the flow down to cool. try getting a timing light and adjusting the timing. you might also look at the advance timing when you throttle it make sure you are getting vacuum to the dis i think it should be port vacuum
